GLUTEN FREE SUGAR COOKIE RECIPE


Sugar cookies are such an easy, delicious treat that takes less than 30 minutes to make! You can ice them, dip them in chocolate or have them as they are with a nice cuppa! If you have any questions about the recipe please don’t hesitate to message me on my instagram:

INGREDIENTS

  • 280g plain gluten free flour

  • 1tsp xanthan gum (not needed if it’s in the flour)

  • 3/4 tsp baking powder

  • 1/4 tsp salt

  • 100g caster sugar

  • 22g icing sugar

  • 112g unsalted butter/ margarine (at room temp.)

  • 1 egg

  • 1tsp vanilla extract

  • 3 tbsp milk (optional)


METHOD

  1. Preheat the over to 180C/ 350F

  2. Add the flour, xanthan gum, baking powder, salt, caster sugar and icing sugar into a bowl and mix.

  3. Add the butter/ margarine and mix until it forms ‘sandy’ crumbs.

  4. Add the egg and vanilla extract to form a dough. If the dough is too dry, add some milk, a tablespoon at a time. If the dough is too wet, add more flour to the mix.

  5. Once the dough is made, pour onto a floured surface and begin to roll it to a 1cm (ish) thickness. The thinner the cookie, the crispier it will be.

  6. Cut into your desired shapes using a knife or cookie cutters.

  7. After cut, place on a baking tray covered in baking paper or tin foil with 1 cm between each cookie.

  8. Let cook for 8-10 minutes or until lightly brown/ golden brown. Place on a cooling rack and allow to cool before decorating.
