INGREDIENTS
280g plain gluten free flour
1tsp xanthan gum (not needed if it’s in the flour)
3/4 tsp baking powder
1/4 tsp salt
100g caster sugar
22g icing sugar
112g unsalted butter/ margarine (at room temp.)
1 egg
1tsp vanilla extract
3 tbsp milk (optional)
METHOD
Preheat the over to 180C/ 350F
Add the flour, xanthan gum, baking powder, salt, caster sugar and icing sugar into a bowl and mix.
Add the butter/ margarine and mix until it forms ‘sandy’ crumbs.
Add the egg and vanilla extract to form a dough. If the dough is too dry, add some milk, a tablespoon at a time. If the dough is too wet, add more flour to the mix.
Once the dough is made, pour onto a floured surface and begin to roll it to a 1cm (ish) thickness. The thinner the cookie, the crispier it will be.
Cut into your desired shapes using a knife or cookie cutters.
After cut, place on a baking tray covered in baking paper or tin foil with 1 cm between each cookie.
Let cook for 8-10 minutes or until lightly brown/ golden brown. Place on a cooling rack and allow to cool before decorating.
