Got a ripe banana leftover from the week? Rather than making banana bread 🥱 why not make banana pancakes 🤩?
Since many of us have so much free time, why not use it to make a delicious, filling breakfast which contains at least one of our 5- a- day?
Ingredients
1 ripe banana
1 egg
3tbsp gluten free plain flour
any toppings/ fillings you’d like to add
Method
Mash up the banana.
Add the egg and mix together.
Add the flour and mix together until it forms a batter consistency and is smooth (it may not be completely smooth because of the banana).
Heat a pan to medium heat and add, using a teaspoon, make some dollops of pancake mixture.
Once cooked, flip and continue until both sides are golden brown. When cooked, remove from the pan and add the next batch.
Repeat steps 4 and 5 until all the batter is used up.
