Gluten free banana pancake cereal recipe

Got a ripe banana leftover from the week? Rather than making banana bread 🥱 why not make banana pancakes 🤩?

Since many of us have so much free time, why not use it to make a delicious, filling breakfast which contains at least one of our 5- a- day?


Ingredients

  • 1 ripe banana

  • 1 egg

  • 3tbsp gluten free plain flour

  • any toppings/ fillings you’d like to add


Method

  1. Mash up the banana.

  2. Add the egg and mix together.

  3. Add the flour and mix together until it forms a batter consistency and is smooth (it may not be completely smooth because of the banana).

  4. Heat a pan to medium heat and add, using a teaspoon, make some dollops of pancake mixture.

  5. Once cooked, flip and continue until both sides are golden brown. When cooked, remove from the pan and add the next batch.

  6. Repeat steps 4 and 5 until all the batter is used up.
