Did you know that one of the main ingredients in takeaways is sugar? So, why not make your own?
Ingredients
3tbsp coriander
3tbs Cumin
1tsp cinnamon
1tsp Cardamom
1tsp turmeric
2tsp black pepper
Cloves 1/2 tsp
½ tsp Red pepper flakes
Chicken thighs
Garlic
Ginger
1 cup of yoghurt
Oil (for pan)
Onion
Butter (roughly 10g)
Pepper flakes
Tomato paste
2 cans crushed tomatoes (or passata if you want less lumps/ runnier
Cilantro
Heavy cream (or any other cream will work)
Rice (for serving)
Method
Mix all of the spices in a bowl (coriander, cumin, cinnamon, cardamom, turmeric, black pepper, cloves, ½ tsp red pepper flakes).
Grate a clove of garlic and a small piece of ginger. Add to chicken thighs along with a cup of yoghurt and 2 tbsp of spice mix. Leave in the bowl to marinate
Add oil to a pan then add half the chicken. Brown the chicken and cook the other half. Once cooked, move onto a plate.
In the pan the chicken was cooked in, add onion, the rest of the spices and butter.
Add pepper flakes and tomato paste and mix.
Add the two cans of crushed tomatoes and mix together.
Add the cilantro and heavy cream, until the colour is light red/ orange.
Simmer the sauce and reduce.
Add the chicken to the sauce and cook until the chicken is thoroughly cooked.
Serve the tikka masala piping hot along with rice.
