Who doesn’t love pancakes! One of my go-to breakfasts because there are many possible topping and filling options!
RECIPE
Ingredients
250g gluten free plain flour
1tsp baking powder
1 medium egg (free-range)
150ml milk
Method
Add the plain flour and baking powder to a bowl and mix until the baking powder is evenly distributed throughout the flour.
Add the egg and mix.
Pour in the milk and whisk together until the mixture has no lumps.
Now it’s time to cook the pancakes. Put a pan on the heat and add some butter/ oil to prevent the pancake from sticking.
Once the butter is melted or the oil has heated up, pour the pancake mixture into the pan.
Once bubbles in the pancake form and DO NOT BURST, it’s time to flip the pancakes!
Once all the pancakes are cooked, decorate and enjoy!
Topping ideas
The best thing about pancakes is it is a blank canvas which gives you the opportunity to decorate and fill them as you’d like. Some topping ideas include:
Lemon and sugar ~classic!
Golden syrup and fruit ~such as blueberries, strawberries and apple
chocolate sauce, store/ bought or homemade
Choc chips~ they can even go into the mix for a nice surprise when eating them
